Regular Unsweetened Cocoa or Dutch-Process Cocoa?
Not sure which cocoa to use? Here are some hints:
Use regular unsweetened cocoa if your recipe:
- Has a lot of ingredients
- Has a large amount of sugar
- Has ingredients that will be cooked
Use Dutch-process cocoa when you’ll taste the cocoa straight up, without much added sugar.
It’s also great for dusting cakes, candies, coffee drinks or hot cocoa.
